Greetings from Bogalusa, Louisiana

Recommended:
Perry's Seafood,
a tiny restaurant on route 26 east of Bogalusa.
Boiled crayfish (pronounced "crawfish).
Boiled shrimp.
Remoulade.
Crayfish etouffe.
(Is that how to spell ay-tu-fay?)
Talking Perry into a tour of the 
as-yet-uncooked crayfish--
I've never held two huge handfuls of those guys before!
